Connie’s Eggs Ole

3 – 4oz cans mild chilies
1 dozen eggs
Minced onions
1 lb. Monterey Jack cheese
16 oz sour cream

* Preheat oven to 350 degrees. Grease 9 x 12 baking dish, drain, wash seeds from chilies. Line dish with chilies. Slice cheese and top chilies evenly. Beat eggs and sour cream until blended. Pour over cheese and chilies. Bake uncovered 30 – 40 minutes. Eggs are done when knife comes out clean. Serves 4 – 6 persons.
