Chicken Cordon Bleu

1 lb boneless skinless chicken breasts (fat trimmed) (4 breast halves)
Muenster cheese slices
2 lg egg whites
¼ c buttermilk
1 T Dijon mustard
2/3 fine dry UNSEASONED bread crumbs
¼ c freshly grated parmesan cheese
½ tsp salt
½ tsp pepper
4 lemon wedges

* Preheat oven to 400 degrees. Lightly oil rack (rack large enough to hold ckn breast in a single layer). Put the rack on a baking sheet. Set aside.

* Take ckn breasts, slice horizontal nearly to the opposite side. Put cheese in chicken.

* Stir in a bowl combine eggs, buttermilk and mustard. In a shallow bowl, stir crumbs parmesan cheese, salt and pepper. Carefully dip each breast in CRUMBS first, then egg mixture then crumbs again. Set on rack. Bake for 30 minutes to 35 minutes until crisp.
