Grammie’s Stuffing

1 lb carrots, peeled and cleaned. Cover the carrots with water and cook until tender, then drain and mash.

2 eggs, beaten
½ c chopped celery
½ c chopped onion
1 T fresh parsley
¾ c butter
1 tsp salt
8 cups cubed day old bread

* Mix the eggs, celery, onion, parsley, butter and salt, then stir in carrots and add it to the bread cubes. Pour mixture into a greased 2 quart baking dish.

* Bake uncovered in a preheated oven at 350 degree oven for 35 to 40 minutes.
